It is the center cut portion of the meat that is known to be the most tender and juicy part of the cow.

It is generally agreed that the dish was created in celebration of the first Duke of Wellington, Arthur Wellesley, and his victory at the Battle of Waterloo on June 18 1815. The Duke was given his title after defeating Napoleon Bonaparte the year before, and not long after he became Prime Minister.

It is believed that the Sunday roast first came about during King Henry VII's rule in 1485. Royal bodyguards were known as 'beefeaters' because of their love of eating roasted beef. There is another theory that the Sunday roast was created in medieval times, when village serfs served the squire six days of the week./p>

The traditional filling in a steak and kidney pie is made with diced beef steak and diced kidneys of an ox, lamb or pig tossed with a beef broth based simple sauce

This dish first appeared in written form in 1861, when it was added to Isabella Beeton's The Book of Household Management by an unknown Sussex local. Originally prepared with a suet pastry, today it is usually made with butter and employs beef, lamb, or pork kidneys.
